I had it as a side with a steak.
500g of sweet potato, peeled and chopped in to 1 inch cubes
Half a dozen cloves of garlic (I used jarred in herb oil because I was feeling lazy)
15g of coconut oil
Put all the ingredients in a small roasting dish (I used cast iron, 1x3x6 ish)
Put in the middle of an oven on 11 for an hourish, poking with a spatchular every 20 minutes
Salt, pepper, herbs, if wanted.
