I’ve been losing weight for about two years now. i’ve lost about 70lbs in the last 22 months. Recently I started eating a lot better, sticking to egg, fruit and peanut butter and banana sandwiches for breakfast and any chicken or veggies combination i can get for dinner. I noticed I was losing weight faster after this. I started working out everyday about two weeks ago to help reduce stress in my life and noticed I’ve been gaining a couple pounds back. Is the extra weight from my muscles growing more? Not sure what’s going on.

Short term variations in weight are usually primarily from water. It’s very unlikely you gained two pounds of muscle so fast, even if you met the criteria for "newbie gains". It’s also unlikely you overate so much you gained everything as fat. Which leaves us with water.
You probably didn’t lose your 70 pounds in a fully linear way, by the exact same amount every week. The same will apply now, if you planned to switch to maintenance. Sudden changes in your diet and/or your activity pattern can cause water retention. Just allow things to settle down, without worrying too much about minor fluctuations in your body weight. If you know you’re doing the right things in terms of eating and exercising, trust the process and carry on.
Depending on your workout routine, make sure it includes sufficient recovery. Some low-intensity activities can be performed everyday, others warrant rest days.

I echo the congrats on your accomplishment. are you possibly eating a bit more on workout days? maybe not watching as closely, having a little bit more pb. the items you list you eat are for sure healthy, but they are also super high in calories, so every little overage is going to add up...
