Hey friends, I need some help here!
This is the thing, I have crazy and busy mornings, getting ready for work, getting my 3-year old ready for Day Care & preparing lunch boxes, so I do not pay too much attention to my own breakfast. I found myself drinking a cup of coffee with some cookies and that's all.
Please, I need some quick and healthy breakfast ideas!

When I fancy to have something in the morning (if having some appetite), have a piece of fruit or some yoghurt.
It provides healthier nutritients to your body than a cookie and keep quite satisfied for a while.

You can make your own Egg McMuffin instead of buying them at McDonalds. Here you go: Lite English Muffin-100 calories. 1/2 slice of cheese-40 calories. 3 tablespoons of egg white-30 calories. Jimmy Dean Applewood Chicken Sausage Patty or Turkey Sausage of your choice-60 calories. You can also substitute about 2 oz ham-about 30 calories. You can also add 1/2 hashbrown patty-about 70 calories. Total calories 300 with the potatoe and without it about 230. Add a little hot sauce for some spice. You can also add Beaters instead of Egg Whites. Egg Beaters area about 30 calories for 1/4 cup.

I never have the time to make something in the morning, so everything has to be done the night before, so what I usually do over the weekend is make a bunch of turkey sausage patties and separate them into single-serve sizes in either Ziploc bags or my trusty Pyrex dishes. I do basically this without the sugar.
Remember, breakfast is just Meal 1! It doesn't have to be a pastry or cereal, it can totally be leftover stew or chicken from the night before! It's odd how that can be a brain-trip for the first few days, but always get something for yourself! You're busy, and you don't need the metabolic/energy dip that accompanies skipping breakfast.

Also, a healthy trail mix is nice to have around! You get your healthy fats and a few carbs in a small, non-perishable package, all you need is protein at that point. Speaking of which -- Meal bars might come in handy if you store a few in the pantry for the super-busy days!

That are great tips @MRose! First, organization it's always good! I loved the idea of having some leftovers breakfast and many thanks for sharing the sausage patties recipe and trail mix tip!

You can also turn it into a breakfast burrito by using a low carb wrap or tortilla. I usually buy mine at Kroger's. They have no more than 100 calories. You can make a lot of substitutions. You can also use bacon bits at about 30 calories a tablespoon. You can add onions, tomatoes, green peppers. They a ton of flavor and have almost no calories.

Egg baskets
So this can be modified to fit your taste any which way, but I eat this every morning and I prep them every Sunday. You can freeze them I usually freeze 4 and keep 3 in the fridge and then once I'm done with the first 3 I place a frozen one in the fridge to defrost before going to bed each night.
I use little glass custard cups but a deep cupcake baking pan would work as well
each egg basket is about 355 calories tons of protein, very filling.
Ingredients
large container of Egg beaters
1 lbs extra lean ground turkey
0.75 lbs hot italian sausage ground meat
1 bag of frozen spinach
0.33 cup frozen diced onion (because I don't want to cut them)
7 taco sized soft tortillas
salt to taste
preheat oven to 425 F
Heat large pot with a little oil and add onion
Microwave spinach for 5 mins then drain
Mix turkey, sausage meat, salt, and spinach in large bowl once evenly mixed add into pot and cook on medium heat until completely cooked.
Spray cups or cupcake pan with cooking spray and place tortillas (try to not rip them)
about 1 cup of meat into each tortilla cup
add egg beaters until just below tortilla cup edge
bake at 425 F for 50mins
done when eggs are cooked through.

This is perfect! I used to do stuff similar to this and you can make a dozen at one time, wrap them in foil and freeze them. In the morning, remove them from the foil and wrap it in a paper towel and microwave 30-60 seconds. Instant breakfast, no guilt!

You can just keep some cereal, powder milk, a cup or dish and a spoon, at the office! @CindyFitbit
Easy and simple. this is what has worked out for me, I just add some Chia seed to everything to make it more nutritional.

I make a quiche on Sunday, I saute up 12-16 oz of sliced mushrooms in a skillet with PAM. use these to line a pie plate as they become the crust. half fill with egg beaters, then add your choice of any or all of these ingredients, fresh chopped spinach, chopped brocolli, sun dried tomatoes, shredded cheese, lean turkey sausage, etc, then add more egg beaters to bring up the level. bake at 350 for 35-50 mins, cut in 5 or 6 pieces and you have a delicious low carb, lean protein breakfast for the week, I alternate the add ins sometimes I saute up diced Pancetta with the mushrooms, use asparagus, etcc

I do something similar. I take 2 dozen eggs, 1/2 milk, 2 bunches of green onions chopped, 6 pieces of bacon cooked then chopped, 1/2 cup shredded lo fat mozzarella, salt, pepper, garlic powder and whip it up in a pitcher. Then I pour it out into greased muffin pans 3/4 full to allow for expansion. Bake for 12 minutes at 375. Let them cool and then remove them from pan, freeze for a couple hours on a cookie sheet (so they don't stick together) then bag them up 2 to a bag in the freezer so I can grab a bag to take with me to work in the morning. I usually drink a protein shake in a blender bottle with almond milk during my drive. I warm up the eggs for an early morning snack after my first 2 meetings are over.
