How do you log food when it doesn't have any nutrition label to know the calorie content?

We buy meat from a meat market. They make their own Sausage ,bacon, brats ect.  While I don't have a brat very often because they are fatty.  Theirs seems to have less fat, but they come in different flavors. How would I log it in fitbit if I'm unsure of the calories? I can log in a regular brat but it's not a regular brat. It's a flavored brat. I would assume it has more calories then a regular brat because of the cheese bits in it. They are really small, and there are green peppers in it too.  What I've been doing is finding one that is higher in calories and using that. But really am unsure of how to log it properly.  And I have emailed the company for calorie information but they don't know the information I need.

I look for something comparable online. Maybe google gourmet sausage companies like this one: https://www.tetonwatersranch.com/product/uncured-jalapeno-cheddar-brat/ and pick something similar in weight.  I usually go with a higher calorie product.
