I was experimenting with different taste flavors with brussel sprouts, and after quite a bit of trial and error I found Franks Red Hot Sauce + Hummus made the perfect dipping sauce. I'm a big fan of the vinegary hot sauces. The Hummus gave a nice thick paste, and the zest of the sauce went well with the bitterness that accompanies brussel sprouts. It's not a taste combination for the faint of heart, but it's healthier then dipping them in butter and salt.
I think the Franks Red Hot Sauce could be replaced with any Cajun vinegar based hot sauce, so you could easily make it spicier, though I can't think of anything milder then Franks.

I am not a fan of hot sauce but the hummus sounds like a great idea. Roasting them with garlic and olive oil is my go-to method:

I love brussel sprouts! shredded, grilled, fried, steamed, boiled, in a soup, with butter, with lemon drops. They taste just fine to me.
I will try y'all recipes, most definitely! My favorite way to have them is simple: steamed with butter. To die for!

I like to toss them in olive oil and lots of powdered cumin, then roast them, and at the end I sprinkle with salt and drizzle with lemon juice.
This also makes cauliflower awesommmmmmmmmmmmme.
They are also good roasted with goat cheese and walnuts.

Thanks for the many good suggestions.
I will definetly have to try to shreading them to see what that does to the taste. Butter and Bacon are definetly yummy, and adding a little bit of saturated fat is ok, but I'm looking for alternatives. I haven't experimented much with Lemon/Lime.

The most important thing is not to overcook them. Brussel sprouts become stinky and bitter when overcooked. Most people and the recipes they follow overcook this vegetable. Check out some sites usch as Amercia's Test Kitchen, etc.

I cut fresh sprouts in half, saute a tablespoon of chopped pancetta in a skillet, then put the sprouts in cut side down over med heat, after they have been coated in the oil I add enough water to half cover them. put a tight fitting cover on the pan and cook until just tender. take of lid, turn up heat to drive off the water.
I also like to cut them in half and steam, then cool and add italian dressig and refrigerate a couple of hours,
