I tried these out the other day, while they probably have more fat and cheese involved they are low carb and absolutely delicious. Just wanted to share 🙂
5 ounces low fat part skim mozzarella cheese cut in halves (I used 5 half inch thick slices I cut off the block then cut those wide so they come out like squares)
2 eggs or (3 egg whites) beaten and seasoned lightly with salt & pepper, set aside that.
In a separate bowl mix 1 1/4 cup grated parmesan cheese, 1 tbsp. of flour, 1 tbsp. Italian seasoning, 1/2 teaspoon of garlic salt and mix well.
Coat each slice of cheese with egg mixture, then coating, then back in egg and second coat of parmesan mix. Make sure it sticks good, then freeze until stiff. 15-30 minutes roughly.
If you want you can fry them but if you want to go healthier pre heat the oven to 475 spray them lightly with coconut or light virgin olive oil and put them in the oven around 12-15 mins turning over halfway.
You will see when they are done they will be golden and may start oozing make sure to take them out before they start oozing a lot so you don't lose the cheese!

This sounds good. I have made homemade cheese sticks before, but never included the parmesan cheese in the breading. Great idea.
