I would love to track what I eat in a day, but with no norwegian food database, it’s impossible. Please fitbit, will you get on this assp?! I’ve seen articles from over 2 years ago saying that you have yet to fix that, but now is the time!

The best foods you can eat are usually those you can’t scan, because they don’t come in a package. However, if scanning your foods is an absolute must for you, you can track with MyFitnessPal, which has a much wider database and can be linked to the Fitbit app. However, many entries have been contributed by users and may contain errors.
Fitbit has added a lot of countries in their food database since the early days (I remember back in 2013 there were only 3-4 countries, now there are 18 of them). However, you have to consider some countries missing (e.g. Russia, Brazil etc.) are much larger than Norway, so I wouldn’t hold my breath for Norway to be added next.
