Anyone have any fast easy meals that I can meal prep? Something that's 10 mins or less. Breakfast, lunch and dinner ideas welcomed.

Ive been on a salad challenge, so my dinners have basically been rocket, cherry tomatoes, cherry bocconcini with a orange and honey dressing and a serving of a BBQ chicken, or roast lamb.

Do you own a slow cooker? I find cooking in a slow cooker is so much healthier and easier, you dont need to add extra oil.

A favourite recipe of mine!

 

Pumpkin, cauliflower & bacon pasta bake

Serves 6| 644 cal per serve

Ingredients

750g pumpkin

800g cauliflower

3 tablespoons extra virgin olive oil

100g middle bacon

400g penne pasta

385ml creamy evaporated milk

200g grated tasty cheese

Directions

Step 1: Preheat the oven to 180°C. Line 2 oven trays with baking paper.

Step 2: On 1 tray, toss pumpkin and 1 tablespoon of oil. On the other tray toss cauliflower and 1 tablespoon of oil. Bake 30-35 minutes until vegetables are tender. Cool slightly.

Step 3: Meanwhile, in a frying pan, heat the remaining oil. Cook the bacon for 8-10 minutes. Set aside.

Step 4: Cook the pasta, following the packet instructions. Drain.

Step 5: Using a food processor, pulse half the roasted cauliflower and evaporated milk until smooth.

Step 6: In a large casserole dish, combine pasta, roasted vegetables, cauliflower and milk, extra evaporated milk and cheese. Toss to coat.

Step 7: Scatter the bacon over the top and toss through the pasta. Bake 20-30 minutes until the top is golden brown.

Step 8: Serve.

I've been looking at recipes for slow cookers. I think that's be good and I
could use that as meal prepping for the week

Any baked egg dish would work!  It's veggies (if using frozen, make sure to defrost and dry), beaten eggs, a little milk, and top with some cheese.  http://allsortsofpretty.com/make-ahead-breakfast-recipe-egg-and-veggie-casserole/

 

It takes just mintues to prep, time to bake and lasts all week.
