FItbit 3 is vibrating even though I have sleep schedule set 9pm to 5am. How can I get it to be quiet during the night?

So-called quiet mode is called "DND" for Do Not Disturb, but if you have a steady schedule, I think "Sleep Mode" suits you better because you can set a schedule, whereas for DND you would have to remember to turn it on each bedtime, the turn in back on each morning. Sleep Mode, in addition to muting notifications, also sets screen brightness to dim, and prevents screen from turning on from accidentally turning wrist in your sleep.

That is not what sleep schedule does. For that, you should be setting 'Sleep Mode' in the Settings.
Sleep schedule actually does very little. It is just for you to set your target. I think you can get a graph showing how how closely your actual bed time and waking time match your target sleep schedule. And if you want a notification that it is time to start winding down to get ready for bed, the time for that is based on you sleep scheduled bed time.

Thanks for this info, very much appreciated. I find it very hard to navigate the settings on the watch. Is there another way to access the Quiet Mode (and other) settings? I'm guessing no, but just thought I would ask.

No, there used to be some things you could set on app on phone, then sync to watch, but now most or all moved to wrist.
