New to Fitbit. Why can’t I update the Inspire 3? It has software 188.58 which I’m pretty sure is old.
There is no option to update!! Yes, I have followed the instructions.

It will take a few days before you get a notification in the upper left-hand corner of the Today screen that a firmware update is available for your device.

As @Bill_209 has mentioned, since you have just setup your Inspire 3 it may appear up to date but it needs another update. The latest update isn't available until up to 48-72 hours after setup. For more information, see What's changed in the latest Fitbit device update?

I've the same issue with @Reece25 (hello there!). And so does my partner, who bought her Inspire 3 *a year-ish* ago. Mine arrived a couple weeks back, and we've followed all available solutions to update both our devices' firmware, but no joy. I canceled my RMA because I feel it's a software issue and not a hardware one. On the wait goes...
