Assuming you're talking about Fitbit Pay and Google Wallet I'm sorry to say that there's no official way to step back. You could contact Fitbit support to see what they can do for you instead:
If your bank isn't support by Google Wallet, you might have a look here for an alternative:

@Dbeebe51 If you migrated your account to a Google Account and want to go back to a Fitbit Account, then the answer is no.

Google has ruined fitbit. I hate it now and I pay for premium. You took our challenges away and our trophies...that sucks big time. I'll be getting a different brand once this watch dies.

That sucks. I lost contact with many of my friends. Thankfully I am connected on Stridekick...but not to everyone I was connected with elsewhere. I am trying to transfer data...I might need to delete one of my Google accounts.
