Hi, currently you can't but some enterprising developer may release a watch face in the future that does. We'll have to wait and see.

If you write your own clock face you can extract pressure from altimeter sensor and convert that to altitude if you also know the temperature.
altitude in mtrs below mean seal level = (t + 459.67) * 5/9 * ( 287.053 * ln((100 * p )/101325)) / (-9.8)
t = Tempreature in Farrenheit
p = atm pressure in hPa
ln is the natural log
All others are constants.

Just install the appropriate app on the device and you'll get it. I have the Altimeter app and it seems to run just fine.
To say that you can't do it is a bit like saying that you can't post to Facebook on your phone because the Facebook app is not installed on your phone right out of the factory.
I hope this helps.

I don't know how I might post a link to the app, but you can just scroll through the apps until you find it.
It's called 'Altimeter' and the developer is 'Marco Castiello'.
I hope this helps.

Today when I try it, I have moved (in the watches mind) to above sea level, (it seems close to my actual elevation)

Are there instructions on how to write my own clock face?
I would love to have the altitude displayed on the clock (as long as it is not constantly draining the battery).

If you're really interested, there's a part of the forum that is dedicated to writing apps for the Ionic/Versa. And it all starts with the Fitbit Studio. That said, I'd look among the available clock faces, there may be one that would suit your needs (displays altitude).
While I'm curious about it, I have not had the time or inclination to start writing apps.
I hope this helps.
