This is the 2nd time this has happened, one email gets "stuck" won't clear and when I try to delete or archive it says "Action Failed, This notification is expired and is no longer valid" Only way I got rid of the last one was by letting it die completely. Any thoughts on a fix?

This is very strange. Please try restarting your watch. Then, check if the notification is still there and if this happens again to you.
You could also try changing the clock face on Ionic and check if the same keeps happening.
Also, if this keeps happening, please share a picture of your watch showing the error. That way, I can take a closer look at it.
