I bought my device in May 2019. First month of owning Ionic, my Fitbit pay (UK bank) worked lovely. Handy for when out running. Since then, it disappears constantly. I’m frustrated with having to reload my card details and wonder if I should accept this is a feature that doesn’t work properly?

I totally understand how you feel, Fitbit Pay should work once it's set up in your Ionic. I noticed I provided some troubleshooting but since it's not working. I'll create a case on your behalf with our Support team, they will continue assisting you and providing you with options.
