Is it possible to track your activities with gps without taking your phone with you? And how?

The Ionic has a built in GPS chip so you do not need your phone if you want to track a run, bike or walk.

I'm sure my Ionic used to track rides/runs etc and show a route map of the activity.Now it just shows data?

I've tried restart etc.GPS is on but always shows "connecting"?

the onboard GPS on Ionic was rendered useless by the last firmware update. You can search threads on here about that. Even when it connects, it's horribly inaccurate. It's really too bad, because until December, it was a great device. Now, I'm starting to reconsider whether I want to keep fitbit.
