I cannot go into my exercise app on my device to record workouts

Have you tried restarting the device by pressing and holding the left button and bottom right button together for 15 secs (until you see the fitbit logo)?

I take it the restart didn't work?
It sounds like a software issue, so the next step I would take would be a full factory reset.

While reading your post I was wondering if whenever you try to access to the Exercise App on your Ionic the watch crashes? Is this the first time experiencing something like this?
Make sure the exercise you want to track is included in the Exercise app. Then, start the workout when you're ready.
