I understand there is a topic that is "solved" on this very subject that is 7 months old, but I honestly don't understand why Fitbit cannot add the option. Here are the reasons why I want connected GPS.
1. The Ionic only lasts up to 10 hours with GPS, I frequently track more than that. My phone can be connected to a power bank, the Fitbit cannot.
2. If I pause the workout on the Ionic, it is still tracking GPS, meaning those 2 hours I stopped and paused the workout made the total life of the Fitbit for tracking 8 hours.
3. If I use the MobileRun feature of the Fitbit app, the automatically created workouts from the Ionic override it. So my 12 hour hike that I logged with MobileRun turned into 3 walking workouts with no map.
That's not say I don't want the built in GPS, either. I use it for other workouts as well. Is it really that hard to add connected GPS as an option? I love the Ionic except for this one small thing, The versa uses connected GPS and it is using FitBit OS as well. Sure, my use case isn't common, but this isn't that big of a feature to add, and doesn't affect people if they don't want to use it.

Not sure if there's a question in there but I can suggest you to use your phones gps and the fitbit app to track your hike and turn off auto recognize walk and hike for your watch.
There's a feature suggestion forum you could post your request in also but I think I saw one there already for this.

I suppose it serves two purposes, one to ask why this won't be implemented (status in help is currently not planned), and two to report a bug that while the workout is paused, the Ionic is still tracking GPS location as if the workout isn't paused.
Nobody ever mentioned in my searching that automatically tracked exercises make tracked things in the Fitbit App disappear... So it takes 4 steps just to log with my phone's GPS and if I miss a step, the whole exercise log is lost.

Honestly here it's just a good willing action by Fitbit. The effort to include Connected GPS is very little (since Versa, that uses the same OS of Fitbit has it) and would only please some users.

@Gakio In my opinion, the workaround for you is to disable auto-track of walks/hikes on the Ionic, and use MobileRun to track.
With my phone, I'm able to get about 18 hours of GPS tracking by putting iPhone 7 (and iPhone 5s) into airplane mode and using RideWithGPS app.
