So my ionic keeps recording data (steps, active minutes, distance traveled, etc.) while it’s hooked up to the charger overnight. I don’t have anything plugged up next to it that could be messing with it and I’ve tried resetting it with no luck.

Is the Fitbit near a vibration source like a fan, dehumidifier, or even a computer CPU? It can see the vibration as steps and add false steps.
You can enter a driving record to get rid of them

Just as @WendyB mentioned, I would like you to confirm that your Ionic isn't near a fan or something that might be vibrating on the same surface as the device. If it is, then try placing it on a different surface and continue monitoring it.
