As of Sunday the sleep tracking stopped working in the app on my S20, but it does work on the computer app. All of the other trackers work on the app. I have tried uninstalling the app with no change.

I appreciate that you uninstalled and reinstalled the Fitbit app. If your sleep is showing in the online Dashboard but not in the Fitbit app, it could be that the tile has been removed, do the following to add tiles:
