My ionic will sync if I open the iPhone app but I sometimes need to reset my ionic for the app to find it. It used to automatically sync but now I have quite a few days with no data because I did not open the app.

Let's tap on the ionic icon to get to the ionic settings, scroll up and enable all day sync.
I'm not sure if iOS has a setting for always connected, if it does, you might want to enable if sync problems continue.

Please try what @Rich_Laue suggested and check if All Day Sync is enabled on the Fitbit app.
