So I've read all the previous posts about this topic and none seem to work.
The last one I tried, it suggested to remove the device then re pair it, this is far easier said than done, as when I go to pair the device in the app again, every time I need to put the code displayed on the ionic, it just pops up with the same message "unlock with phone" so now I can't even pair it with the app.
Any help please 🙂

Did you check fitbits help doc, this would be the first place to go.
To unlock with the phone requires the tracker to be connected to your Fitbit account. Removing the tracker will only prevent the user from being able to follow the unlock with phone procedure.
We will need to reset your your ionic. I'm sure you found several threads with this procedure.
On the watch, hold all three buttons for about twelve seconds. This triggers the 2-button hardware reboot after about eight seconds.
- When the Fitbit logo appears, then disappears, release the bottom right button, then continue holding the left and top right buttons until you feel a strong vibration. This indicates the factory reset was initiated.
- This process may take several seconds, and eventually, the Fitbit logo appears and the device boots and displays go to Fitbit.com/setup.
- If you fail to release the bottom right button in time, or otherwise don't follow the procedure precisely, the Fitbit logo reappears quickly and boots without factory reset.
