Hi,
My devices: Ionic, Mobile Moto G5 plus, Pc with Windows 10
I tried to set up my interval workout
Fitbit.com>Ionic>Interval workout> check rest and set time (2')
Result: no synch
When I re-open fitbit.com the changes are not there (rest does not appear)
There is not sync on the app neither on the watch.

Welcome to the Community @claudio65! Thanks for the details you've mentioned. After any change you perform, your Ionic needs to sync to your account in order to accept it. If your watch isn't syncing, please try this troubleshoot.
Also, confirm you're clicking on save after you change the intervals' time:
