If you remember the exact amount of steps or the name of the activity you performed, you can try manually logging the activity. For more information, see Can I add an activity manually to the Fitbit app?

Hi,
I accidentally deleted an activity because the GUI surprised me the way it worked: I swiped left on my running activity to see what options it would present, expected a touch anywhere else to dismiss the options but instead when I lifted my finger at the end of the swipe, the entry was deleted. Unless the "DELETE" button is actually pushed, I don't think any entry should be deleted. In particular, one that Fitbit figured out should be slightly harder to delete with an escape option like "Are you SURE you want to delete your RUN?"
After a small mistake like that, an "UNDO" option about 1 activity deep would be nice to restore the activity back to the record.
