This has happened in the past but this is the first time I've been frustrated enough to ask the community for assistance.
So far this week my Luxe is showing 2 days of exercise (Monday - 71 zone minutes & Tuesday - 98 zone minutes). However, today I have 68 zone minutes and, even after syncing multiple times, I still only have 2 days of exercise showing.
Any help will be greatly appreciated.

If I understand correctly, you have 68 zone minutes, but are not credited with an exercise session and are wondering why not.
The simplest way to be sure to get credit for an exercise session is to use the Exercise Session on your wrist. Anything recorded with the Exercise App counts as an exercise session. If you don't know how, see How do I track my workouts with my Fitbit device?
If you really want a deeper understanding than that, (active) zone minutes (AZM) and exercise sessions came about at different times and are measured differently so it is possible to get either without the other.
AZM - tap on the Zone Minutes circle on phone app to see the heart rate limits of exercise zones. When you get your heart rate in the Fat Burn or Cardio zones, you get Zone Minutes, no matter how long. Today you could have gone 10 minutes in cardio zone 3 different times for 60 zone minutes, plus 8 minutes in fat burn for the other 8 zone minutes, with no exercise sessions.
Exercise Sessions - assuming you are not using Exercise app, must be something auto-recognized by Fitbit as one of the auto-recognized exercises for at least the minimum time. To see these, tap the days of exercise tile of phone app, then the gear icon near to right, to see the 7 auto-recognized exercises and the minimum time for them to count as a workout. To be recognized requires Fitbit recognizing what you are doing just from the movement pattern of your wrist, which I find, other than for walking, is not very reliable. I think the default time for all those is 15 minutes but you can change from 10 to 90 minutes. And if you take an auto-recognized walk of 15 minutes but stay below the fat burn threshold, getting credit for a workout but not getting any Zone Minutes.
Confused.
Bottom line: Just use the Exercise App and you will be happy.
