Hey MsSweetcrum,
All depends if your going to check it often and if you are going to use it to determine if you should be eating something to stay in the zone. If you are basically going to check it once in a while or end of day the Sedentary would probabbly be best.
Note: with this setting you can start the day with a very low calorie estimate.
If you check often and at any given moment you want to know if you have calories for a snack the use Personalized
Note: this will change dynamically all the time (can be different then the Dashboard when first entering the website) its is partially based on previous activity. So if your not active for a few days or don't use your fit bit probabbly not the best.
I personally use Personalized and love it. Best answer i can give you is try both for a couple days and figure out how you like your data shown.
