Healthy Meals

Ok I have done very well with my weight loss so far as I am down 63 pounds but I have hit a wall.  I still have a long ways to go.  I am getting tired of the diet and find myself cheating more often.  I need some advise on some quick easy recipes so that I can mix things up a bit.  I can't do anything too spicy otherwise it upsets my stomach.  I also have a hard time eating plain vegitables so if you have any tips to pair with the veggies to make them taste better I would really appretiate it.

 

I work in the medical field and am on call in the evenings a lot so if any of the recipes do well cooking ahead of time and putting them in the fridge or freezer for later that is a huge bonus...I am always afraid to spend a lot of time cooking in the evenings I am on call because I feel like that is when they will call me in.

I travel for work and often prepare food to take with me so I don't have to eat in restaurants on the road.  One is a southwestern chicken salad using roasted chicken, yogurt, cumin, celery, smoked paparika, salt and pepper, whole kernal corn and black beans.  You can heat or eat cold.

 

A nice boston butt with a dry rub cooked low and slow and turned into pulled pork.  Chorizo hash is also good, but watch portion control.  Try a rosotto with brown rice.  Stuffed green pepper with brown rice and ground lamb.  Fresh, organic mushroom soup (chicken or vegetable broth based not cream).  Brussle sprouts grilled with balsamic glaze.  Swiss Chard with parmesan cheese.  Grilled artichoke.  Oatmeal patties.

 

The world is your oyster.  Get creative.  Don't be afraid of dense calories, just watch the portions.

@Blazer5967Here is my go to stir fry that my 12 year old can't get enough of. I eat this probably three times per week: 50 calories of brocolli, 10 calories of bok choy, 20 calories of pepper (any color), 30 calories of snap peas, 20 calories of mushrooms and 30 calories of whatever veg you have that needs to go. 70 calories of imitiation crab or any protein you like. stir fry on med high heat until veggies are how you like them. in the last 2 minutes of cooking, add 1 tbs of any sugar free jelly, turn up the heat and give final stir fry until jelly is disolved. Of course salt and pepper in the beginning of stir fry. I usually have a 60 calorie wrap with this and a fruit. You can adjust the veg and calorie amounts per your preference and needs. so good.

Hey there @Blazer5967! What about Chicken and Broccoli Rice Bowl? I love this recipe, hope you like it too, it doesn't take more than 20 - 25 minutes 😉

3 cups small broccoli florets 

1 (8.8-ounce) pouch precooked brown rice (such as Uncle Ben's)
1 tablespoon olive oil
8 ounces skinless, boneless chicken breasts, cut into bite-size pieces 
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
1/2 cup chopped green onions 
3 ounces light processed cheese (such as Velveeta Light), cut into 1-inch pieces
2 tablespoons sliced almonds, toasted

 

Preparation

 

1. Steam broccoli 5 minutes or until crisp-tender.

2. Heat rice according to directions.

3. Heat oil in a large nonstick skillet over medium-high heat. Add chicken; sprinkle with salt and pepper. Cook for 4 minutes or until done, stirring occasionally. Add onions and cheese, stirring until cheese begins to melt. Stir in rice; fold in broccoli. Cook 1 minute or until thoroughly heated. Sprinkle with almonds.

I just made a very nice cauliflower soup (trick is to cook half the cauliflower 15 minutes, then add the other half for another 15 minutes - onion and leeks sautaed), braised beef shanks served over herbed polenta, Wild Rice and Mushroom soup so hearty you'd think it had beef in it (cook the rice in the oven at 375 after adding baking soda to the water).  I also just ordered a couple of cases of grape leaves with which to make domadoes (stuffed with rice and lamb mixture).

I struggle with eating salads, and today I made one with romaine, chickpeas, feta, tomatoes and avocados and it was the very best salad I've ever had! In fact, I think it's now one of my favorite recipes. Give it a try, it's pretty awesome!

 Hey there @coco1129 welcome to the Community! That salad is a must for sure!  Do you like chicken? What about adding some chicken to it? For me it would make it peeeerfect!
