I exercise by "spinning". I note that below the heart avg bpm is a bar with 66% cardio on one day. Another day may have 75% fat burn. Does anyone know the criteria that decides these estimates? Also the relationship of the criteria.

Those are the amount of time in that heart rate zone.
The heart rate zones are out of zone, fat burn zone, cardio zone, and peak zone, with increasing intensities.

It’s not an estimate. It’s just the breakdown of time spent in each HR zone, based on the HR detected by your Fitbit while you performed the exercise. If you perform the same exercise at the same intensity, you should have relatively similar results.
