@sandbear Nice to see you on the Community! You came to the right place to search for inspiration. Just to make sure that I understood your post.
Due old habits, you are not eating healthy enough or enough food. Please correct me if I'm wrong.
What I've done in cases where I don't get hungry or are too busy to have a good meal. I try to snack vegies a lot.
I'm lucky that the market near me, sells small cups with cut vegies (vegies sticks). I have it on my desk and snack on them a lot. It varies between carrots, cucumbers, fruits, any vegetable or fruit, that can be cut and eat raw. I try to avoid the bottle seasonings (dressings) and try make my own, mostly with lime and oil.
Also I try to make pasta salads. That can be eaten cold, so that I have them on the fridge and just serve them at any time.
Hope this gives you any inspiration.
Without noticing I get to eat 2-3 cups of them a day.

Some people think you have to cut out fat to lose fat - did you do that?
It's a myth of course.
So fruit is out since you want low carb. Why low carb?
Some vegetables are high carb too though full of nutrients like fruits.
Fat is really the solution if you want to cut out carbs for whatever reason, unless you just enjoy eating more protein and can afford above and beyond what the body may require.
Are you attempting to eat in way you can sustain after the diet?
Nows the time to train to eat like you can keep eating - if low carb is it fine.
I like these Bird's Eye Vege Pasta dishes, except Cheese and elbows tastes funny to me - the others are different but tasty enough. About 400 cal each.
Bird's Eye Protein Blends also has some nice variety, but the stock has been terrible during pandemic so not sure what's up there.
