Regarding weight, have a look at your BMI (it's calculated for you in your Dashboard). The "normal" range is 18.5 to 24.9:

Note what they say if you are very athletic etc. Though not directly related to weight, waist circumference (one of the body measurements you can track in your Fitbit account) is also important.
As to body fat, here is the reference table you can find in your Dashboard:
It's not obvious to find it: there's a link labeled See guidelines for body fat when you edit your body fat % goal.
