I’m using an iPhone and I don’t see the pencil icon in Minerva. Tapping or holding down the date does is not working as far as being able to edit the start date of a period. Please help.

Welcome to the Fitbit Community @Jricig, hope you're doing great! When you press the pencil icon to edit a period, you will see the option to Save, Cancel, or Delete it.
If you're having difficulty doing this, please close and then restart the app. Also worth noting that you should have the latest version of the Fitbit app downloaded.
If a period doesn’t meet the following requirements, you may receive an error and be unable to log the period:
Note that If you attempt to log a period in the future or a period with less than a one-day gap between periods, the pencil icon is unavailable. If you don’t see the pencil icon, make sure the period you’re attempting to log or edit meets all of the requirements.
Hope this clarifies why the pencil might be unavailable. I'll be around, keep me posted!

I'm having this same issue (on Windows 10). App says period due in 4 days and when I went to slide the predicted period to today and save, I got a pop up box saying "An unexpected server error occurred." I have the latest version of the app. I restarted the app multiple times. I restarted my computer and then restarted the app yet again. Nothing.

Hey there @Orc17, thanks for stopping by and for already troubleshooting this inconvenience! Are you still having this error message? If so, can you please send me a picture showing it? Have you tried what I posted above?
As a friendly reminder, at this time, female health tracking is available in the Fitbit app for iOS, Android, and Windows 10. This is not available on Fitbit.com Dashboard.

Yes, as originally stated in my post, I have attended to the previous suggestions. The app is up to date and was restarted multiple times, as well as my computer which runs on Windows 10.
Hoping you can see the image below. Very frustrating to still be happening - throws out the predictions on my next cycle (naturally).

Thanks for the screen shots provided @Orc17! Can you please try confirming the period first and then drag to adjust the dates?
