I've had my fitbit one since march 2017, everything has been fine. Last week it stopped syncing to my app on my iPhone 7, so I disconnect the fitbit from the app thinking this would help, now I cant connect it back. When I search for my fitbit one, it says it cant find the device even though its on and working fine, it just doesn't seem to want to be discovered to be connected. I thought it may be my phone, but its not because I have successfully connected my sisters fitbit flex 2 to my phone and connected within seconds. please help me 😞

First thing to try when a fitbit misbehaves is a restart using the following procedure:
https://help.fitbit.com/articles/en_US/Help_article/1186/
It does no harm and can sort out all sorts of issues. You might need to give it a few tries though as it's known to not always work.
