My Fitbit one is counting steps and floors when I’m driving. Over the last 2 weeks it has gone super sensitive and after a car journey Iv done loads of steps. How can I stop this??

You can't stop it, but you can delete the erroneous data by manually logging driving as an activity for that period of time.

How can this be done? As Iv looked everywhere on the dashboard but can’t
see anywhere to log driving??
