I have been using my current Fitbit One for years but it’s finally died on me. I have been brought a new one for Christmas but am worried that I will lose all my data when I set it up. Does anyone know if this is the case or how I can keep all my stats and badges? 

Ive worked hard to get them so would hate to lose it. Many thanks.

The steps are saved to your account, not on the device itself. Thus, you can remove the old One and connect a new oOe without losing any of your stats and badges, as of the last time you synced the old One. I did that myself a few months ago and only lost the steps on the old One that hadn't been synced at the time it died.
