Should I buy ionic, adidas edition or versa?

only interested in workouts not running.

Does any of them already come with the coach Fitbit app?

As you're not into running it's likely that you don't need GPS so I would go for the Versa as it's much cheaper. The Coach app is available on each and you can compare other features at http://www.fitbit.com/compare
