You can delete the steps and flights of stairs by entering a driving activity. However, that's not going to remove the badge awarded.
Pragmatically, these numbers are probably small enough that you should just take them and forget about it. Once you're here long enough, the badges you get will simply accumulate in count. For instance, I just checked and I've gotten the 10 floors badge 1300+ times. Am I going to sweat it if I got this badge when I didn't earn it the very first day? Probably not.
That said, if the badge is not one that you think you'd get naturally (like 250 flights of stairs), then the only way I know of to reset this is by either establishing a new account OR having Fitbit Support delete your account and creating it again.

@PureEvil After looking around the community site and several of your posts, it became obvious that you have a great deal of technical knowledge concerning Fitbit devices and have been Fitbiting for a long time.
