I walked 1 hour on a treadmill (3 miles) and my One tracker showed 8000 total steps for the day. Then I manually logged the exercise using the iphone app, and my step count dropped to 5000 and my miles dropped to 1.2 after syncing. Why did it do that?

You don't have to log anything manually when you're wearing your Fitbit One unless you're involved in a non step-based activity. Logging your treadmill workout had for effect to overlay the actual data that your One recorded. Deleting your manual log should cause your steps, as captured by your Fitbit One tracker, to spring right back. The following help document explains this in more details:Logging activities.
What I find a little strange in your case is how significant the difference in step count is between the actual data from your One and the calculated step count from the manual log (which I believe is the product of the distance you keyed in divided by your stride lengths). You may want to check your stride lengths in your profile. Three miles and 8000 steps, if you do the math, comes out to about a 24" stride length. Knock down the step count to 5000 and that translates into a 38" stride length for the same three mile distance - which is not impossible but unlikely unless you're a very tall person.

it boosted my step count back to the original count. I need to measure my
stride length to understand the discrepancy in the other measurement. Thanks
