if i put my fitbit one in exercise tracker mode ( pressing fitbit one button when i start & finish exercise ) & i go for a walk , what exactly is the info collected? active minutes steps etc...
does the active minutes from the tracked exercise count towards my daily active minutes total?
also so if i use exercise tracker mode will it overwrite steps once i log the walk?

You should not log the walk if you are using exercise mode.
Use the exercise mode and let Fitbit do its thing
Above is what will record on your computer Dashboard
Below on the Phone Under the exercise tile

i have activated activity mode and was walking for 15 minutes and then i stopped the activity mode by pressing & holding the button , i then synced my fitbit & looked on fitbit.com dashboard and under activities it did log a 15 minute walk
but then i was looking on the dashboard & under recent exercise it says no recent exercise even though my walk synced? if the walk is logged under activitys why is it not showing up as exercise?

You'll only get the behavior you're expecting if you're using one of the newer FitBits. I believe the behavior you're expecting to see is associated with SmartTrack.
"The SmartTrack feature automatically recognizes select exercises to ensure you get credit for your most active moments of the day. It is available with all trackers except Fitbit Charge, Flex, One, and Zip."
Now, my understanding of SmartTrack is that it'll start tracking without the user doing anything. If you enter exercise mode on a FitBit One, you'll see an item in the Activity Log (on the dashboard not any of the apps) but it will not fill in your "Days of Weekly Exercise" polygon. If you log the walk manually, you will see that it counts as exercise. For example, if using your timer in exercise mode you learn that you walked at 7:00 pm for 30 minutes and made 5000 steps you can manually enter an activity. That manual activity will report as exercise and fills in the polygon. However, the instant you do that, FitBit just divides the steps over the time equally and if you've been climbing hills you lose that richness too.
I find this fairly silly and annoying. I have had my One for a few years and prefer it because I don't like wearing watches so I'm not interested in the wrist devices and I don't expect that they'll release any non-wrist devices going forward. FitBit doesn't invest any development energy in their older devices or software to support them so I doubt it'll change. I can understand that but I think if they're going to continue to sell them a little effort would be nice.
