Is there a way to export exercise data etc to a spreadsheet ? I really want to keep track of how much I ride my horse, speed, calories burned etc.

There are two ways of exporting data but you may not be able to get all the data you want.

Both ways are available via https://www.fitbit.com/settings/data/export

The new way is via the "request my data" button. This will download most of your data but in a json format which is hard to get into a spreadsheet.

The old way is via clicking the "If you would like to use the old data export tool click here." This will download data in a format that's easy to load into a spreadsheet but you are limited in what you can download. I suggest giving this a try to see if it works for your needs.

SteveH.... the download comes in a zipped file which is an absolute pain. The download function didn't seen to even let me select what dates I want to download either, no wonder it comes in a zipped file as every time you have to download everything since start of using fitbit.

Are you sure you're using the old style export? The new way (the default) exports everything but the old way only exports up to 31 days.
