Outdoor bicycle continues to be a mystery to me.  When I go walking, there is an easy way to start that activity on the Mobile App.  There is a drop down menu for walk, run and hiking.  

Is there a way to add Outdoor Bicycle to that drop down menu?

No, not for the app, but you may use the bike mode on the Charge 3
