I work out on a stairmaster almost every day. The way I have to enter it is to use the web dashboard (not the app), click on Log>Activities>Walk and then manually enter all info, every single time. I know the Fitbit won't pick up the activity but is there a way I can create and save a shortcut?

Unfortunately, you cannot create your own workouts or shortcuts on the Fitbit App. However, on a Stairmaster, I would suggest using the "Walk" or "Treadmill" shortcut.
Fitbit sometimes also picks up when you are doing other activities, like Sports.

Yes, there is. If you go into settings for the tracker in the dashboard, there is a section called "exercise shortcuts". You can have up to 7 shortcuts listed. If you have 7, remove one you don't use. Then you can add a shortcut...and Stair Climber is already one of the defined ones! Just add that exercise, and it will show up on your tracker after that. Enjoy.
