Having to scroll through several apps I don’t use is staggeringly slow and has made the Fitbit Inspire 2 a drag to use.

I feel your pain but it's a common characteristic of the current Fitbit trackers line up and that Fitbit doesn't seem willing to change. Here it's one of the many similar suggestions that has been closed as Not planned. You might want to vote for it, it doesn't harm, but I wouldn't hold my breath to see it implemented.
