I don't need help anymore but I wanted to share my solution in case anyone is researching a fix for why their Inspire 2 won't connect.
I did everything: restart phone, restart Inspire 2, turn bluetooth on and off, uninstall/reinstall app, turn off wifi, etc. The trick for me was to Clear User Data from the Inspire 2 itself. Once the user data was cleared it was able to pair to the app again and sync without issue. Might want to back up your data through your Google account first to be safe.

I'm glad to read you sort this out, also thanks for sharing with us the steps you took to get this situation resolved. I'm pretty sure it would be helpful for other users that are facing the same issue.
