I have the Fitbit app on both my iPhone and IPad, since the update of the tracker on the iPhone it has the versa 3 connected in the account bit, but in the iPad bit it just says looking.

You should reframe from connecting your Versa 3 to two separate devices at the same time. It can cause conflict and confusion to the Fitbit Tracker. But, since it says “just looking” I would restart the Versa 3 and see if that resolves it: https://help.fitbit.com/articles/en_US/Help_article/1186.htm
You can try disabling your iPhone when you want to look at the Fitbit App on your iPad and keep your iPad Bluetooth off when you want to view the Fitbit App on your iPhone.
You shouldn't have any issues with syncing Versa 3 through two different mobile devices. If you are using Supported devices, as long as you are logged into the app on each device your watch should sync. But having notifications set up on both could be a bit tricky. So you might consider disabling one device of notifications and enable the other.
