Fitbit today only has 3 stats

Just got a brand new Fitbit Versa 2.. Absolutely love new features, and nice upgrade from versa 1, only problem in the today stats only have available heart rate, steps and hourly activity. I use the other stats usually, like badges, sleep and log water, and all the guides say I can have 7 stats, when there is no option to add anymore. 

I did not have this problem on my old versa, I have tried all the following

Restarted device

Factory restored device

Uninstalled fitbit on phone and factory restore device together

Been onto today app, and no updates available. 

I have now spent hours trying to sort this, and cannot find anyone else's topic on this which says do anything different

After bringing up the Today screen, do you scroll on down as far as you can to "Settings"?

Yes I scroll down and go 9nto settings, , and at the top it says select stats that easily track with fitbit today, and there is only 3 to choose from, with 3 boxes activity, hourly steps and heart rate.
