Loving the watch so far, but I'm having trouble with the bottom button.  What exactly is the button's function on the versa?

Take a look at page 16 of the manual  - click - which shows you what each button does.

Chick, both right side buttons can be used for shortcuts to Apps.  For example, my top right button is a shortcut to Weather and my bottom right button is a shortcut to Exercise/Walk. See page 20 in the manual  for how to set shortcuts.

If the left button won't do anything, sounds like a hardware malfunction and you need to contact Customer Support.

Actually page 21 is where you can find this info.

Actually I don't think the manual instructions are accurate - or maybe it's only accurate for certain apps - because, according to the manual, a long press on the top right button should be a shortcut to the first app I've arranged on my apps page (which, right now, is a calendar app that I downloaded from the Fitbit app gallery), and it doesn't open the calendar; it simply opens to the notifications screen.

The manual is correct!  You make a SHORT press to invoke the shortcut.
