I purchased a Versa 3 and received it on August 13th. In one week, I had to charge it 4 times. I called Fitbit and received a replacement in today’s mail.
Do I remove (delete) the defective Versa 3 and start set up on the new one?

Hi there, @KGM0612. Welcome to the Community Forums.
I agree with @Odyssey13. However, I'd remove the old Versa 3 from your phone's Bluetooth settings first to make the process smoothly.
If you can't get started with your Versa 3, usually a missing requirement is the cause. Carefully review the requirements provided in the help article Why can't I set up my Fitbit device?

Hi @KGM0612 as long as the original one isn't in range, just set up "replacement on an existing account" and your history will be there to continue the journey.
