In several other recent posts, many other people were having issues with the SPO2 metric not not showing up in the application or the reading not being taken directly on the watch. I also have had the same issues recently and want to clarify how it was fixed.
First a few weeks ago, the SPO2 metric showed up on the watch but not in the IOS app. Next, it stopped showing on either the app or watch. After reading messages on the boards, I followed a suggestion to uninstall/reinstall the SPO2 watch face.
SPO2 started working overnight for both the app and watch after uninstalling/reinstalling the SPO2 clock face yesterday. My question for future reference is was there an update on the backend on Fitbit servers yesterday to fix it or was the problem fixed on my watch by uninstalling/reinstalling the SPO2 watch face?

Probably, the SpO2 app installed on your watch had a pending update. To check if there is any pending app update we recommend following the next steps:

Thank you @EddsonFitbit for the response. The clock face was not installed from the apps section. It was installed via the Clock Faces section.
Unfortunately, this morning, I am back to the "Couldn't read SPO2" message on my watch before and after rebooting the watch and application.
<update> - I see a version update notice on my phone for my device. I am updating it today. Also, note there were no updates showing for clocks in Apps.

Thanks @EdsonFitbit. I updated the watch to 72.1.15 and it is working again today. My IOS version is 3.43.1 (1057).
