Hello - Am I able to set a pace target for a run on my watch or phone? I'd like to run a 10k race with an average pace of say 7min/km. Am I able to set that up and keep checking on my watch that I'm on track? i know that Garmin can do this, but not sure able Fitbit.

Hello @Camilla123 and welcome to the Community. The exercise shortcuts let you set goals like distance, calories, time, etc., and your device will vibrate when you reach your goal. Fitbit goals are designed to tell you when you are done. When you are using the exercise app, your screen shows real time stats. You can see your current pace, but you can't program a desired pace.
I took this photo to show a different feature, the manual lap count option. You can ignore that part. You can see that your current pace is one of the middle screen stats. If you know your goal pace, you can follow it by looking at your screen, but you don't get any kind of vibration feedback if you are off your goal.
