If I uninstall and reinstall Fitbit app as suggested by Fitbit techs since the last update has basically killed my watch, will I lose last 3 years of data. Would hate for that to happen!! What would happen if I just removed the watch from app? Would I be able to add it back on?

No you would not lose it. The Data is on the server not your watch itself
