My fitbit isn't keeping the correct time or date, how do I change that?

Hi there, @LewisLa. Welcome to the Community Forums. Thanks for the details provided in your post about the issue with your Versa 3.
As a first approach, may I know the model of your mobile phone? Please make sure it meets the requirements listed here.
I agree with all information shared by @James291. Keep in mind that your Versa 3 may show an incorrect time if it hasn't synced or has been unpaired from your Fitbit account. Your Fitbit grabs the time of the device you're syncing with. To make sure your watch has recently synced, go to your Fitbit account, tap the Today tab > your profile picture > your device image.
If you realize that you've been running into syncing issues, see Why won't my Fitbit device sync?
If the above doesn't describe your issue, I'd suggest to change the current clock face. Trying switching to a one developed by Fitbit in case you're using one from a third-party developer.

Has your watch always had this problem or has it recently started?
Your watch should receive periodic time and date corrections from the Fitbit app. Check that your watch is paired and successfully syncing with your phone. The last sync time can be found in the app on the account page.
Check that your phone is keeping the correct time and date.
In the app it's worth checking your time zone and location are correct. Look in account, app settings. Sync after any changes.
Try shutting down and restarting your watch and phone.
Lastly if you have changed the watch clock face, then maybe switch to a different one in case of a glitch with the current one.
